Pastry Chef
MAIN DUTIES & RESPONSIBILITIES:

Plan, organize, and supervise the daily operations of the Pastry & Bakery section to ensure smooth and efficient production.
Ensure all pastries, breads, desserts, and bakery products are prepared and presented in accordance with established recipes, quality standards, and presentation guidelines.
Develop innovative dessert concepts, seasonal menus, and specialty pastry items in collaboration with the Executive Chef.
Monitor food quality, portion control, stock levels, and wastage to optimize food costs and maximize operational efficiency.
Ensure adequate mise en place is maintained and that all pastry and bakery products are available according to operational requirements and occupancy forecasts.
Lead, train, coach, and motivate the Pastry & Bakery team to maintain high performance standards, product consistency, and continuous professional development.
Maintain strict compliance with food safety, hygiene, HACCP, and occupational health and safety standards within the pastry and bakery areas.
Manage inventory, requisitions, stock rotation, and storage procedures, ensuring that all ingredients and supplies are properly handled and maintained.
Handle guest requests, special dietary requirements, complaints, and special event dessert preparations professionally and efficiently.
Assist the Executive Chef in departmental administration, performance evaluations, recruitment, and implementation of continuous improvements to enhance guest satisfaction and operational excellence.
Qualification & Skills
- Qualifications: HSC or equivalent qualification. A Certificate, Diploma, or Professional Qualification in Pastry Arts, Bakery, Culinary Arts, Food Production, or Hospitality Management will be an advantage.
- Experience: Minimum 3–5 years’ experience in a pastry and bakery environment within a hotel, resort, restaurant, or catering operation, including at least 1–2 years in a supervisory or senior pastry position.
- Personal Qualities: Strong leadership and organizational skills, creativity and attention to detail, excellent communication and interpersonal skills, customer-focused attitude, ability to train and motivate team members, problem-solving abilities, and capacity to work effectively under pressure while maintaining high quality standards.
- Additional Skills Required: Sound knowledge of pastry and bakery production techniques, menu development, food cost control, inventory management, HACCP and food hygiene standards, and occupational health and safety regulations. Basic computer skills (Microsoft Word, Excel, and Outlook) and the ability to prepare reports, requisitions, and production records will be an advantage.
