Restaurant Manager – Luxury Country House Hotel

We are looking for an accomplished Restaurant Manager to lead the team within an intimate and highly regarded open-fire restaurant at one of Hampshire’s most prestigious luxury country house hotels.

This unique restaurant offers an interactive dining experience, with talented chefs cooking seasonal dishes over an open fire in full view of guests. Combining exceptional food with warm, polished service, it provides a relaxed yet refined alternative to traditional fine dining.

You will lead a professional team of six, taking responsibility for the smooth running of each service while ensuring every guest receives a memorable and highly personalised experience.

The Restaurant Manager will:

• Lead, motivate and develop a professional front-of-house team
• Oversee the restaurant’s day-to-day operation
• Maintain exceptional standards of service and presentation
• Create a warm, engaging and personalised guest experience
• Work closely with the chefs to deliver a seamless interactive dining concept
• Manage rotas, training, team performance and service standards
• Build strong relationships with guests and confidently manage feedback
• Support commercial performance while protecting the quality of the experience

The ideal candidate will have:

• Previous experience managing a quality-led restaurant
• A background within luxury hotels, fine dining or an award-winning restaurant
• Strong leadership skills and a genuine passion for developing people
• A confident, visible and engaging management style
• Excellent food, wine and service knowledge
• The ability to balance polished standards with a relaxed and natural approach

The restaurant is open for dinner from Tuesday to Sunday, as well as lunch on Saturdays, offering a particularly attractive working pattern for a senior hospitality professional.
