About the job

Based at the Mandarin Oriental, Hong Kong within Kitchen Division in Hong Kong, the Commis is responsible have the vision and future planning to assist in development to drive their department in all aspects, whilst assisting the Executive Pastry Chef in following all MOHKG guiding principles. The Commis reports to the Chef de Cuisine - Terrace Boulud.

As Commis - Terrace Boulud, you will be responsible for the following duties:

• Responsible for mise-en-place in kitchen
• Maintain proper quantity of par stock for mise-en-place
• Keep the specific kitchen areas clean and hygienic
• Check refrigerators, utensils and kitchen equipment on cleanliness
• Adhere to all the standards of food handling, production, preparation, portioning and presentation
• To be aware of and adhere to company policies and statutory requirements with regards to health and safety, sanitation, fire procedures and HACCP
• Assist the senior chefs in preparation and production of all food items

As Commis - Terrace Boulud, we expect from you:

• 1-2 years of relevant experience in similar capacity
• Self-motivated and responsible
• Independent and able to work under pressure
