What you will have an opportunity to do:
The Resort Beverage Manager is responsible for the strategic leadership, development, and execution of all beverage operations throughout the resort. This position oversees beverage programming, menu development, training, inventory controls, vendor relationships, and beverage profitability across all restaurants, bars, lounges, pool venues, beach operations, banquets, catering, and special events.
Reporting directly to the Director of Food & Beverage, the Resort Beverage Manager serves as the resort's beverage expert and is responsible for creating innovative beverage experiences that elevate guest satisfaction, strengthen outlet identities, drive revenue growth, and position the resort as a leader in food and beverage excellence.
Essential Responsibilities
Beverage Strategy & Program Development
- Develop and oversee the resort-wide beverage strategy across all food and beverage outlets.
- Create unique beverage identities for each venue while maintaining consistency with the resort's overall brand standards.
- Design and implement cocktail, wine, beer, spirits, coffee, non-alcoholic, and seasonal beverage programs.
- Lead beverage menu development, pricing strategies, and menu engineering initiatives.
- Continuously evaluate industry trends, emerging products, and guest preferences to enhance beverage offerings.
- Develop signature cocktails and exclusive beverage experiences that differentiate the resort in the market.
Beverage Operations
- Oversee beverage execution and quality standards across all resort venues, including:
- Vicolo
- Solfina Bar & Terrace
- Cocoplum Pool Bar
- Flipside Beach Bar
- Spoonbill Coffee Shop & Marketplace
- Banquets and Catering
- Special Events and Activations
- Conduct regular outlet audits to ensure beverage consistency and service standards.
- Monitor beverage preparation, presentation, and service techniques.
- Ensure compliance with all alcohol service regulations and company policies.
Leadership & Training
- Develop and lead comprehensive beverage training programs for managers, bartenders, servers, and banquet teams.
- Create standardized recipes, specifications, and operating procedures.
- Conduct onboarding and ongoing beverage education programs.
- Lead wine, spirits, cocktail, beer, coffee, and responsible alcohol service training.
- Mentor outlet leaders and beverage-focused team members.
- Support recruitment, selection, and development of bartenders and beverage specialists.
Financial Management
- Develop beverage budgets, forecasts, and revenue strategies.
- Drive beverage revenue growth and profitability across all outlets.
- Monitor beverage cost percentages, pricing, margins, and operational performance.
- Analyze sales trends and implement initiatives to improve profitability.
- Establish and maintain beverage cost-control procedures.
- Partner with outlet managers to achieve financial goals and performance targets.
Inventory & Purchasing Management
- Oversee resort-wide beverage purchasing and inventory management.
- Establish product specifications and approved vendor relationships.
- Negotiate pricing and promotional opportunities with suppliers and distributors.
- Monitor inventory levels, ordering practices, and product utilization.
- Implement and maintain inventory control procedures and auditing processes.
- Reduce waste, shrinkage, and product loss through effective controls.
Wine, Spirits & Specialty Beverage Programs
- Curate resort wine selections and oversee wine list development.
- Maintain relationships with wineries, distributors, and beverage suppliers.
- Lead premium spirits, bourbon, tequila, whiskey, and specialty cocktail initiatives.
- Oversee craft beer and local beverage partnerships.
- Support coffee, espresso, and specialty beverage programs throughout the resort.
- Develop beverage pairings and specialty offerings for culinary events and promotions.
Banquets, Catering & Events
- Oversee beverage programming for weddings, conferences, social events, and resort activations.
- Develop banquet bar packages, specialty cocktails, and event beverage experiences.
- Support large-scale events, wine dinners, tastings, and promotional activations.
- Collaborate with catering and conference services teams to enhance event revenue opportunities.
Marketing & Revenue Generation
- Partner with Marketing to develop beverage promotions and campaigns.
- Assist with social media, public relations, and beverage-focused content.
- Support special events, tastings, mixology classes, wine dinners, and seasonal activations.
- Identify opportunities to increase average check, beverage capture rates, and guest engagement.
Compliance & Risk Management
- Ensure compliance with all federal, state, and local alcohol service regulations.
- Maintain beverage-related licensing requirements and documentation.
- Conduct regular audits of cash handling, inventory controls, and beverage procedures.
- Ensure responsible alcohol service standards are consistently followed throughout the resort.
Hilton Systems & Technology
- Utilize Hilton-approved systems, POS platforms, inventory management systems, and reporting tools.
- Analyze beverage performance through reporting and business intelligence platforms.
- Maintain recipe databases, costing systems, and operational documentation.
- Monitor guest satisfaction metrics and beverage-related performance indicators.
What are we looking for?
- Minimum 5 years of progressive beverage management experience.
- Luxury hotel, resort, restaurant group, or multi-outlet beverage leadership experience preferred.
- Experience overseeing multiple food and beverage outlets.
- Certified Sommelier, WSET, BarSmarts, Court of Master Sommeliers, or similar certifications preferred.
Knowledge & Skills
- Advanced knowledge of wine, spirits, cocktails, beer, coffee, and beverage trends.
- Strong financial and analytical skills.
- Experience with beverage menu engineering and cost management.
