Overview
Job Summary
The udder dropper is the process of using a knife to mark pattern or remove the udder from the carcass. The udder dropper is responsible for making the first pattern cut on the hide by making a cut from round seam to navel on steers or by marking around udder and removal of the udder on cows.
Key Responsibilities:
- On steers, mark hide between legs, continue with midline opening to navel.
- On cows, remove udder starting at top of udder and cutting around each side to remove complete udder. Must be careful not to cut into udder to avoid milk-contamination.
- Steel knife and then place knife into sterilizer after each carcass.

Qualifications
Minimum Qualifications (Required):
- Must be 18 years of age or older.
- Must be able to work in the United States without sponsorship.
- Must be able to work in a humid, hot, wet, slippery, or at varied heights in and around moving equipment and parts with the use of personal protective equipment (PPE).
Preferred Qualifications:
- Previous experience/knowledge of manufacturing environment.
- Previous heavy machinery experience in manufacturing environment.
- Previous agriculture production/ beef plant experience.
Knowledge, Skills, and Abilities:
- Be attentive to detail.
- Ability to work safely, wear PPE, and follow instructions.
- Ability to attend work consistently.
- Always be aware of your surroundings.
- Follow all safety, food safety, and Sanitary dress procedures.
- Able to stand for lengthy periods of time.
- Display strong work ethic.

Summary
America's Heartland Packing is set to open its doors in early 2025. The 775,000 sq. ft. greenfield project will include a harvest floor, carcass chillers, fabrication area, rendering, further processing area, storage coolers, freezers, and loading docks.
