About the job
Based at Mandarin Oriental, Costa Navarino within the Culinary Department in Pylos, Messenia, Greece, the Junior Executive Sous Chef οversees all culinary operations, including menu planning, food cost control, and ensuring consistently high standards of food quality and presentation. The Junior Executive Sous Chef reports to the Executive Chef.
As Junior Executive Sous Chef, you will be responsible for the following duties:
Ensure the highest standards of food quality and timely preparation across all culinary operations, including banqueting, while overseeing product quality, ordering, requisitioning, and stock rotation.
Support smooth culinary operations by communicating operational and manning needs, contributing ideas for new guest services and products, attending required training, and carrying out additional duties as requested by management.
Manage the team by setting clear food standards and responsibilities, preparing schedules and rosters, coordinating annual leaves, overseeing training, and ensuring adequate coverage for all functions.
Be responsible for and accountable for the departmental operating budget, while improving operational efficiency, maximizing revenue opportunities, identifying cost-saving measures and maintaining the highest standards of guest service and product quality.
Ensure high standards of kitchen cleanliness, hygiene, and food safety by working closely with the Back of House and Hygiene teams, maintaining HACCP compliance, addressing potential issues, supporting audits, and continuously improving sanitation and hygiene practices.
As Junior Executive Sous Chef, we expect from you:
Valid EU Passport or Hellenic Residence Permit.
Globally recognized Culinary Qualification.
Degree in Hotel and Catering Management will be considered as a plus.
6 years' relevant working experience, of which 3 years in hospitality and 3 years of supervisory experience.
Fluency in English. Fluency in Greek will be considered as a plus.
F&B and menu planning knowledge.
