About the job
The Supervisor will oversee and be personally involved in all operational aspects of a particular shift in order to assure all service steps are followed and to guarantee every single guest is delighted. Furthermore, the supervisor will support the management of the outlet in administrative tasks.
As F&B Supervisor, you will be responsible for the following duties:
Have a very good understanding of the outlet's concept and RB&E offerings, and be able to verbally explain those to guests and train colleagues on them.
Oversee and manage shifts effectively to ensure a smooth and effective overall operation, guiding colleagues on and personally involving oneself in all required aspects of the sequence of service.
Maintain a great synergy between all outlets within RB&E, as well as the hotel overall, to assure maximum efficiency.
Ensure the timely delivery of all amenities as per standards.
Provide direction and support to all outlet colleagues at any time, particularly during operational hours.
Support the Restaurant/Outlet Manager when required to train colleagues in accordance with the applicable standards and policies.
Follow the side duty schedule and assure all tasks are completed at all times in a timely manner.
Conduct pre-service briefings, ensuring tasks are followed up efficiently prior to guests' arrival.
Ensure mise en place is completed shift to shift and during service in order to provide efficient service.
Ensure management and kitchen colleagues are informed of any special guest preferences or allergies.
Support other outlets as assigned by the Restaurant/Outlet Manager.
Any other reasonable tasks as assigned by the Restaurant/Outlet Manager.
Practise Responsible Service of Alcohol (RSA) at all times, in line with UAE law and the outlet's licence conditions.
Support outlet management in monitoring and controlling costs, including food and beverage cost, breakage and wastage.
Carry out cashiering duties accurately — including daily cash and credit collections, floats and end-of-shift reconciliation — in line with hotel cashiering policy.
Assist with daily and monthly inventories and stock counts.
Ensure POS transactions, voids and discounts are processed correctly and in line with policy, escalating any discrepancy.
Drive up-selling within the shift to support outlet revenue targets.
Ensure MOHG's grooming and appearance standards are implemented and maintained at all times, reflecting an image of professionalism and care.
Communicate well with colleagues and superiors in order to avoid misunderstandings and other shortfalls caused by lack of communication.
Be committed to being a team player, proactively cooperating with and supporting colleagues in operational tasks.
Support the induction and on-the-job training of new colleagues within the outlet.
Listen to every guest and observe body language carefully in order to understand guest needs and expectations, and consistently delight and satisfy every guest.
Ensure customer satisfaction from arrival to departure in accordance with the MOHG Legendary Quality Experiences (LQEs), the MOHG Pillars and the respective MOQA service standards.
Create WOW moments to surprise and delight guests through gestures and other actions.
Handle effectively any kind of guest complaint, verbal or written, and report to managers without fail.
Report guest preferences to superiors and act upon them whenever known.
Be aware of, and comply with, safe working practices as laid down under FLHSSE (Fire, Life, Health, Safety, Security and Environment), including awareness of any specific hazards within the work area.
Supervise compliance with HACCP, Dubai Municipality food safety regulations and Mandarin Oriental Safe, Sound & Sustainable standards throughout the shift.
Act as Person in Charge (PIC) for food safety during assigned shifts, where certified to do so.
Carry out and record temperature checks, FIFO stock rotation, date labelling and cleaning schedules during the shift, escalating any deviation immediately.
Ensure allergen and dietary requirements are accurately captured and communicated to the kitchen and to guests.
Ensure colleagues on shift maintain personal hygiene standards, and that any illness or infection is reported before commencing duty.
Know the fire evacuation procedures, assembly points and location of fire-fighting equipment and first aid kits, and guide colleagues accordingly.
Report any defects in the building, plant or equipment, and any accident or incident involving colleagues, guests or visitors, in accordance with Hotel procedures.
Attend all statutory FLHSSE and food safety training as scheduled, and maintain valid certification.
Refuse service and escalate to a supervisor where a guest appears intoxicated or is unable to provide valid proof of age.
As F&B Supervisor, we expect from you:
High School qualification or equivalent.
Degree or Higher National Diploma in Hospitality/Hotel/Business Management is preferred.
Experience as Supervisor in a high-volume restaurant with highest levels of service is preferred.
A minimum of 2 years of experience working in a 5-star luxury hotel environment.
Ability to understand guest needs and to deliver superior customer service.
Ability to work long hours with a strong focus on operational excellence.
Familiar with restaurant point of sales and cashiering procedures is preferred.
Perform job with attention to details and the ability to organize and handle multiple tasks.
Knowledge of dining and lounge service procedures and standards.
Ability to understand the flow of service and support colleagues.
Proven ability to successfully support the management to motivate and lead a diverse team.
Ability to handle multiple tasks effectively.
Basic computer skills including MS Office.
Fluent verbal and written communication skills in English.
Verbal and written communication skills in Arabic or other languages are preferred.
Ability to oversee a large and complex area and to work in an outdoor environment in a hot climate.
