About the Role

Four Seasons Hotel Singapore is seeking an experienced, passionate, and highly visible leader to join our Food & Beverage team as Restaurant Manager for Jiang-Nan Chun (江南春), our award-winning Cantonese fine dining restaurant. Widely recognised as one of Singapore's leading Chinese dining destinations, Jiang-Nan Chun is renowned for its refined Cantonese cuisine, exceptional wine programme, impeccable service standards, and loyal clientele of discerning local and international guests. We are looking for a leader who can uphold and further elevate the restaurant's reputation while inspiring a high-performing team to consistently deliver exceptional dining experiences. Reporting to the Director of Food & Beverage, the Restaurant Manager will provide leadership across all aspects of the restaurant's operation, including guest experience, team development, commercial performance, service excellence, and operational execution. This role requires a hands-on leader who is highly visible on the restaurant floor, builds lasting relationships with guests, develops people with purpose, and fosters a culture of excellence, accountability, and continuous improvement. Working closely with Culinary, Beverage, and Hotel leadership teams, the successful candidate will play an important role in shaping the continued success and prestige of one of Four Seasons Hotel Singapore's signature dining experiences.

What You Will Do

  • Provide day-to-day leadership, direction, and support to the restaurant team, ensuring exceptional service delivery and consistent execution of Four Seasons standards.

  • Serve as the visible leader of the restaurant, maintaining a strong presence on the floor during service periods while coaching team members in real time, engaging guests, and ensuring operational excellence throughout the guest journey.

  • Champion a culture of genuine hospitality, professionalism, attention to detail, and personalised service that creates memorable dining experiences and lasting guest loyalty.

  • Build meaningful and enduring relationships with guests, recognising preferences, anticipating needs, and creating a strong culture of guest recognition, personalisation, and service recovery.

  • Lead reservations, seating strategies, guest flow, and dining room operations to optimise both guest satisfaction and business performance.

  • Recruit, onboard, coach, develop, and mentor team members while fostering a positive, engaged, and high-performing work environment.

  • Conduct regular training, performance discussions, and developmental coaching to strengthen capability, succession readiness, and leadership bench strength within the team.

  • Partner closely with the Chinese Executive Chef and Food & Beverage leadership team to drive guest experience enhancements, promotional initiatives, and business objectives.

  • Take ownership of the restaurant's commercial performance by monitoring trends in covers, average cheque, guest feedback, labour productivity, and operating costs, identifying opportunities that enhance both profitability and guest satisfaction.

  • Manage labour planning, scheduling, payroll productivity, inventory control, equipment maintenance, and operating resources in line with business needs.

  • Review guest feedback, online reviews, and service metrics, translating insights into meaningful action plans that continuously elevate standards and performance.

  • Ensure full compliance with Four Seasons standards, food safety regulations, workplace safety requirements, and operating procedures.

  • Collaborate effectively with Culinary, Reservations, Concierge, Sales, and other hotel departments to deliver seamless guest experiences and support overall hotel success.

  • Foster a culture of accountability, teamwork, continuous improvement, and care, while empowering team members to take ownership and contribute to the restaurant's success.

What You Bring

  • An established track record of leading high-performing service teams and delivering exceptional guest experiences within luxury hospitality or fine dining environments.

  • Minimum 3 to 5 years of leadership experience in a Restaurant Manager or equivalent role within a luxury hotel, Michelin-recognised restaurant, fine dining establishment, or premium hospitality environment.

  • Previous experience within Chinese fine dining, Cantonese cuisine restaurants, or luxury Asian dining concepts is required.

  • A strong passion for luxury hospitality, combined with a genuine commitment to service excellence and guest-centric leadership.

  • Demonstrated success in building engaged teams, developing talent, driving performance, and fostering a culture of accountability and collaboration.

  • A hands-on leadership style, with the ability to lead from the floor while balancing operational, commercial, and administrative responsibilities.

  • Exceptional guest relations and communication skills, including the ability to build rapport with VIPs, high-profile guests, and loyal patrons while confidently managing service recovery situations.

  • Strong commercial acumen, with the ability to interpret business performance, identify opportunities, and implement practical solutions that support revenue growth and operational effectiveness.

  • Solid understanding of restaurant operations, labour management, forecasting, inventory control, financial performance drivers, and luxury service standards.

  • Knowledge of Chinese cuisine, tea culture, wine service, and food and beverage pairing principles will be viewed favourably.

  • Excellent organisational skills, attention to detail, and the ability to perform effectively in a fast-paced luxury hospitality environment.

  • Excellent spoken and written English is required. Proficiency in Mandarin will be advantageous to support effective communication and relationship-building with Mandarin-speaking guests.

  • Proficiency in Microsoft Office applications and restaurant management systems is preferred.

  • Familiarity with Microsoft Copilot and an openness to thoughtfully leveraging AI to enhance productivity, insight, and operational effectiveness will be viewed positively.
