We are seeking an experienced and passionate Chef de Cuisine to lead our signature Indian restaurant. This is a Department Head position with full responsibility for the culinary operation, team leadership, financial performance, food quality, hygiene standards, and guest experience.
The restaurant features two distinct culinary concepts:
- Authentic, traditional Indian cuisine.
- A contemporary interpretation of Indian gastronomy with modern techniques and presentation.
To successfully lead this concept, we are looking for a chef who has spent the majority of their career in Western luxury hotels or fine dining restaurants, while possessing a strong foundation in Indian cuisine. This balance is essential to deliver both authenticity and innovation in line with the resort's culinary vision.
Key Responsibilities
- Lead all culinary operations of the restaurant.
- Ensure consistent execution of both the traditional and modern Indian menus.
- Develop seasonal dishes and continuously innovate while respecting authentic Indian flavours.
- Recruit, train, mentor, and develop the culinary brigade.
- Manage food cost, labour productivity, purchasing, inventory, and departmental expenses.
- Maintain the highest standards of food safety, sanitation, and HACCP compliance.
- Work closely with the Executive Chef on menu engineering, promotions, and business initiatives.
- Collaborate with Front of House to deliver exceptional guest experiences.
- Be highly visible during service, interacting confidently with guests and handling special requests and feedback professionally.
- Oversee ordering, receiving, stock management, scheduling, performance management, and all administrative responsibilities related to the restaurant.
Candidate Profile
- Proven experience as a Chef de Cuisine or strong Senior Sous Chef in a luxury hotel or fine dining environment.
- Extensive knowledge of authentic Indian cuisine.
- The majority of professional experience gained in Western luxury hospitality or fine dining, with exposure to contemporary culinary techniques and international service standards.
- Strong leadership and people development skills.
- Excellent communication skills with fluent spoken English.
- Comfortable engaging with guests and representing the restaurant during service.
- Strong understanding of financial management including food cost, labour management, menu engineering, and inventory control.
- Highly organized, self-driven, and capable of managing all operational and administrative aspects of a standalone restaurant.
- Experience working within Forbes Five-Star or Michelin-level standards is highly desirable.
Preferred Experience
- Previous experience opening or repositioning restaurant concepts.
- Experience leading multicultural culinary teams.
- Background in luxury resorts is an advantage.
- Creative approach to modern Indian cuisine while maintaining authenticity.
