Position Overview:
The Food & Beverage Manager is directly responsible for the daily operations of the Food & Beverage Department at Daytona Lagoon, delivering exceptional guest service and outstanding food quality while achieving the department's guest service and financial goals. This role leads the F&B team across all outlets—concessions, kitchens, and bars—managing product, labor, compliance, and profitability while developing a strong seasonal leadership team. The ideal candidate is a proactive, results-oriented leader who leads by example, prioritizes effectively, and thrives in a fast-paced, collaborative environment.
Position Responsibilities:
- Manage the day-to-day operations of the Food & Beverage Department across all outlets to ensure exceptional guest service and achieve or exceed departmental profitability goals.
- Hire, train, supervise, and evaluate the F&B team, including seasonal leadership, to ensure operating efficiency and a focus on team member growth and development.
- Partner with Human Resources to recruit, hire, train, coach, and discipline Food & Beverage Team Members and Leadership.
- Coordinate staffing and scheduling and control labor expenses in line with budget guidelines
- Oversee the food and beverage product lifecycle—ordering, portioning, rotation, and cost control—and manage cost of sales expenditures.
- Manage all F&B locations to ensure revenue goals are met or exceeded.
- Ensure compliance with all health, safety, labor, food, and alcohol regulations, including Health Department and state alcohol-service requirements, and conduct periodic audits and safety checks to maintain standards.
- Monitor and maintain food & beverage safety and sanitation, recipe documentation, execution, and quality controls.
- Create, update, and approve purchase request orders as needed.
- Complete the Food & Beverage Department's monthly inventory and regularly review product quality to enhance food quality and guest satisfaction.
- Develop and revise training materials, operating procedures, and safety protocols.
- Audit F&B locations, quickly determining and recommending improvements to enhance operations and guest satisfaction.
- Supervise the resolution of guest complaints and train leadership to ensure a positive guest experience.
- Drive sales through approved service programs, upselling strategies, and incentive-based initiatives.
- Assist in developing and implementing strategic and long-term plans for the Food & Beverage Department, and provide recommendations to increase revenue, improve profitability, and boost guest satisfaction.
- Collaborate with the Group Sales team to support and execute year-round special events.
- Follow and enforce all Pyek and Daytona Lagoon policies and procedures, ensuring consistency across all F&B outlets.
- Support front-line operations as needed, leading by example to maintain high service standards.
- Proactively identify and address operational and equipment issues through collaboration, monitoring, and troubleshooting, ensuring timely reporting and resolution.

Requirements
Qualifications:
- Minimum of 2 years of Food & Beverage management or leadership experience required.
- Must be able to obtain a Food Manager's Certification, Food Handler's Permit, and any required alcohol-service certification.
- Strong analytical skills with expertise in product optimization and strategic purchasing.
- Proficient in Microsoft Office and experienced with scheduling, point-of-sale (POS), and inventory systems.
- Must be an effective communicator with strong written and verbal skills, able to deliver feedback, share analysis, communicate updates, and lead teams with a positive influence.
- Ability to relate to guests and team members to resolve problems.
- Strong organizational skills with the ability to manage multiple tasks and operations in a fast-paced, high-volume environment.
- Ability to meet deadlines and maintain accuracy and professionalism with attention to detail, performing responsibilities with minimal supervision.
- Must be able to stand and walk for extended periods of time.
- Must be able to work in both indoor and outdoor environments, including direct sunlight, high temperatures, or rain.
- Must be able to lift, carry, push, or pull items weighing over 30 pounds as part of daily responsibilities.
- May occasionally be required to bend, stoop, kneel, reach, climb, or balance.
- Must be able to multi-task and remain flexible in a fast-paced environment.
- Must be able to work weekdays, weekends, early mornings, evenings, and holidays, including long hours during peak season.
- 2 years of industry experience (Water Park, Theme Park, or other related entertainment) strongly preferred.
Education:
- High school diploma or equivalent (GED) required; associate degree preferred.
