Cook/Supervisor

Description

The Cook has overall responsibility for the provision of a high quality dining service that takes into account resident preferences and dietary consideration in compliance with applicable food and sanitation regulations. All responsibilities will be conducted in a manner that is consistent with the philosophy of Charlesgate Senior Living Center.

1. Supervises and assist staff in the production of all menu items, including using recipes and production records, using high quality ingredients, operating kitchen equipment, portioning and garnishing.
2. Supervises safe food handling procedures for cooking with special emphasis on critical temperatures.
3. Inventories supplies daily to ensure proper stock levels for the preparation of menu items
4. Supervises and assists staff in maintaining high standards of sanitation and safety. Monitors food temperatures during storage, preparation, cooking, and service of all phases of food served. Monitors the labeling and proper storage of all foods. Monitors and records temperatures of all kitchen refrigerators and freezers daily.
5. Maintains the preventative maintenance program for kitchen equipment.
6. Immediately reports to maintenance any malfunction in equipment or physical plant.
7. Assist in reviewing and controlling food, labor, and supply costs.
8. Controls overproduction, waste and theft of all products.
9. Monitors use and misuse of equipment, utensil, and cleaning supplies
10. Maintains accurate daily production records to aide in future production, purchasing and control of expenditures.
11. Works as a team member to maintain a pleasant, effective work environment.
12. Participates in and supports the resident-centered activity program.
13. Responsibilities are not exhaustive and may change to meet business needs

Requirements

CERTIFICATIONS/EXPERIENCE

1. Three years’ experience as a cook, preferably within the hospitality field.
2. Must have and maintain an active license. 
3. Must remain flexible with hours.

CRIMINAL BACKGROUND Local, state and federal Background Criminal Investigations (BCI checks) must validate no history of criminal activity.

COMMUNICATION SKILLS / English - Ability to read, speak, and understand spoken and written directions. Ability to respond to common inquiries or complaints from residents or regulatory agencies.  

WORKING CONDITIONS

-Works in a sometimes hot and humid and sometimes cold kitchen area. Area may become congested and noisy during busy times.

-Works with stoves, griddle, steam cookers, refrigerators, food mixers, food processors, meat slicers, dishwashing equipment, sinks, knives, and various utensils, pots and pans.

-Work hazards include hot surfaces, steam, wet floors, hot oil, equipment and cleaning chemicals.

PHYSICAL DEMANDS The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job.

Must possess sight/hearing senses, or use prosthetics that will enable these senses to function adequately so that the requirements of the position can be fully met.

1. Must be able to relate to residents and staff in a courteous and diplomatic manner under all circumstances.
2. Must be able to stand for multiple hours in duration.
3. The employee is required to stand and reach with hands and arms and to lift and carry kitchen supplies and items (up to 50 lbs.).
