Under the direction of the Production Manager and Head baker, the Baker 1 is responsible for the production of multiple bakery products according to culinary, Under the direction of the Production Supervisor and Foreman, the Baker I plays an important role in creating the high-quality baked goods that guests and customers enjoy every day. This position is responsible for producing a wide variety of bakery products while following established formulas, production schedules, quality standards, and food safety requirements.The Baker I works hands on with ingredients, doughs, batters, fillings, and finished products, helping transform raw materials into irresistible baked goods that reflect the quality and craftsmanship of King's Hawaiian. This role offers an opportunity to develop bakery manufacturing skills, learn a variety of baking techniques, and contribute to a team committed to operational excellence, food safety, and continuous improvement.
The Baker I accurately scales, mixes, deposits, bakes, finishes, and packages of products including cookies, cakes, pies, laminated doughs, breads, rolls, and other bakery items. Success in this role requires attention to detail, teamwork, a commitment to quality, and pride in producing products that exceed customer expectations.

Production Operations:
Prepare bakery products from scratch by accurately following approved formulas, recipes, batch sheets, and production schedules.
Scale, weigh, measure, sift, and mix ingredients using commercial bakery equipment.
Produce a variety of bakery products including:
Chiffons
Pound cakes
Hi-ratio cakes
Cheesecakes
Pies and pie fillings
Cake batters and fillings
Breads and rolls
Cookies
Laminated doughs including croissants, Danish pastries, and puff pastry
Coffee cakes and other specialty baked goods
Mix and deposit batters and fillings into pans and molds according to product specifications.
Roll, sheet, fold, laminate, cut, shape, proof, and prepare doughs for baking following established production procedures.
Operate bakery equipment including mixers, sheeters, dough dividers, ovens, proofers, slicers, wrapping equipment, depositors, and other production machinery.
Monitor baking times, oven temperatures, and product appearance to ensure consistent quality.
Remove baked products from pans and racks while handling products carefully to maintain appearance and quality.
Slice, package, label, and prepare finished products for shipment or customer orders.
Prepare cookie dough for rolling, cutting, baking, cooling, and packaging.
Produce crumb products, graham crusts, pastry creams, fillings, icings, and other bakery components as assigned.
Assist with packaging, staging, and preparing customer orders according to production schedules.
Completing documentation for accurate traceability.
Maintain productivity standards while minimizing product waste.
Food Safety & Quality:
Follow all SQF (Safe Quality Food) requirements, GMPs (Good Manufacturing Practices), HACCP procedures, allergen control policies, sanitation standards, and company food safety programs.
Maintain clean, organized, and sanitary workstations throughout each shift.
Properly clean and sanitize equipment, utensils, and work areas following established sanitation procedures.
Wear required personal protective equipment (PPE) and maintain excellent personal hygiene in accordance with food manufacturing standards.
Perform quality checks throughout production to ensure products meet appearance, weight, texture, and quality specifications.
Report food safety, quality, equipment, or product concerns immediately to the Supervisor or Foreman.
Complete all required production, quality, and food safety documentation accurately.
Inventory & Material Handling:
Rotate ingredients and finished goods using FEFO (First Expired, First Out) inventory practices.
Monitor ingredient inventories including flour, sugar, eggs, butter, dairy products, fillings, and other raw materials.
Properly label and store ingredients, work-in-process, and finished products.
Notify supervisors when ingredients or packaging materials require replenishment.
Health and Safety:
Cooperates on all matters relating to safety and health in the work area and positively promotes safety in operations.
Immediately reports all accidents to the Supervisor/Foreman and obtains first aid for all injuries.
Safely operate commercial bakery equipment according to company procedures.
Monitor equipment performance and report maintenance concerns promptly.
Maintain a clean and organized production area that supports safe and efficient workflow.
Follow all company safety policies and safe lifting procedures.

Required Qualifications:
High School or GED
Valid Food Handler's Certificate preferred
Speaks and understands basic English
Logical reasoning ability
Able to be present at work for assigned schedule, including nights, weekends, holidays and extended hours when required
Able to handle multiple tasks and work well in an environment with time constraints
Ability to occasionally lift up to 50lbs, frequently lift up to 25lbs and regularly lift up to 10lbs
