About the role

The BBQ Chef is responsible for the preparation and presentation of authentic Cantonese barbecue specialties, including roasted duck, char siu, crispy pork belly, soy chicken, and other traditional roasted meats. The role ensures the highest standards of food quality, consistency, food safety, and kitchen hygiene while supporting the culinary team in delivering exceptional guest experiences.

What you will do

Food Preparation & Production

  • Prepare and cook Cantonese BBQ items including:
    • Peking Duck
    • Cantonese Roast Duck
    • Char Siu (BBQ Pork)
    • Crispy Roast Pork Belly (Siu Yuk)
    • Soy Sauce Chicken
    • BBQ Pork Ribs
    • Roasted Goose (where applicable)
  • Marinate, season, and prepare meats according to established recipes and standards.
  • Manage roasting schedules to ensure freshness and product availability during service.
  • Monitor cooking temperatures and quality throughout the preparation process.
  • Ensure attractive presentation of all BBQ dishes prior to service.

Quality Assurance

  • Maintain consistency in flavor, texture, appearance, and portioning.
  • Conduct daily quality checks on ingredients and finished products.
  • Ensure compliance with food safety, HACCP, and sanitation standards.
  • Minimize food waste through effective inventory management and production planning.

Kitchen Operations

  • Assist with ordering and stock control of BBQ-related ingredients and supplies.
  • Monitor equipment such as roasting ovens, duck ovens, BBQ stations, and refrigeration units.
  • Maintain a clean and organized workstation.
  • Support banquet and special event operations when required.

Teamwork & Training

  • Collaborate closely with Cantonese culinary team members.
  • Train and mentor junior cooks and commis chefs in BBQ preparation techniques.
  • Contribute ideas for menu development and seasonal promotions.

What you bring

  • Minimum 3-5 years of experience as a BBQ Chef, Roast Meat Chef, or relevant position in a Cantonese restaurant.
  • Strong knowledge of traditional Cantonese roasting techniques.
  • Experience preparing roast duck, char siu, crispy pork belly, and other Chinese BBQ specialties.
  • Knowledge of food safety and hygiene regulations.
  • Ability to work efficiently in a fast-paced environment.

Preferred Qualifications

  • Experience in luxury hotels or Michelin-recommended Chinese restaurants.
  • Formal culinary training or culinary certification.
  • Knowledge of menu development and cost control.
  • Basic English or Japanese communication skills preferred.
