The Role
We are seeking a passionate and talented Banqueting Sous Chef to join our dynamic kitchen team. Reporting to the Head Chef, you will play a key role in delivering high-quality, innovative dishes for large-scale events, ensuring every guest enjoys a memorable dining experience. This is an exciting opportunity for a creative and driven individual to shine in a prestigious venue.
Key Responsibilities:

Assist the Head Chef in planning, preparing, and executing high-quality menus for banquets, weddings, and events (up to 300 guests).

Supervise and motivate the banqueting kitchen team, ensuring consistent standards and efficient service.

Ensure all dishes meet the highest standards of presentation, taste, and quality.

Manage food preparation, stock control, and wastage to maintain profitability.

Maintain strict adherence to health, safety, and hygiene regulations (HACCP).

Collaborate with the events team to tailor menus to client specifications.

Contribute creative ideas for seasonal and bespoke menu development.

Assist in training and mentoring junior chefs to foster a positive kitchen culture.
Requirements:

Proven experience as a Sous Chef or Senior Chef de Partie in a high-volume banqueting or fine-dining environment.

Strong knowledge of Irish and international cuisine, with a focus on seasonal, locally sourced ingredients.

Exceptional organizational and leadership skills, with the ability to perform under pressure.

A relevant culinary qualification or equivalent professional experience.

In-depth understanding of food safety and kitchen hygiene standards.

Excellent communication and teamwork skills.

Flexibility to work evenings, weekends, and holidays as required by event schedules.
