About the location:

This beautiful grade II listed building and former HQ of the Port of London Authority has 100 rooms, 41 residential apartments of which 31 units are in a FS run transient rental program, a stunning ballroom which has hosted the inaugural Reception of the United Nations, 5 meeting rooms, a stunning destination spa with 8 treatment rooms, hammam, steam, sauna and swimming and vitality pool, and a fantastic Food and Beverage offering including Cooper's Cut (Modern Steakhouse), Mei Ume (Chinese/ Japanese cuisine) and Rotunda (all day dining, afternoon tea & bar)

Our Main Kitchen supports several of the hotel's key dining operations, delivering everything from premium steakhouse cuisine at Coopers Cut to luxury In Room Dining and all day dining at Rotunda Bar and Lounge.

Four Seasons Hotel London at Tower Bridge is seeking a Chef de Partie to join our Main Kitchen team.

The role

As Chef de Partie, you will take ownership of your section and play a key role in delivering exceptional food quality across Coopers Cut, In Room Dining, and Rotunda.

You will lead and develop junior chefs, maintain the highest culinary standards, and ensure your section operates efficiently throughout preparation and service. This is an excellent opportunity for a talented chef looking to further their career within a luxury hotel environment while gaining exposure to a variety of dining concepts and service styles.

What you will do

• Lead the day-to-day operation of your designated kitchen section
• Prepare and present dishes to the highest standards of quality, consistency, and presentation
• Support service across Coopers Cut, In Room Dining, and Rotunda Bar and Lounge
• Supervise, train, and support Demi Chefs de Partie and Commis Chefs
• Maintain excellent standards of food safety, HACCP compliance, and cleanliness
• Assist with stock management, ordering, and stock rotation
• Support labour efficiency and waste reduction initiatives
• Work closely with Sous Chefs and senior culinary leaders to ensure smooth service delivery
• Contribute ideas for menu development, seasonal dishes, and operational improvements
• Maintain a positive, collaborative, and professional kitchen culture

What we are looking for

• Previous experience as a Chef de Partie within a quality driven kitchen environment, or an experienced Demi Chef de Partie in a luxury hotel ready to step up
• Experience within luxury hospitality or premium restaurants
• Strong leadership and team development skills
• Excellent knowledge of food safety, HACCP, and kitchen compliance standards
• Strong organisational skills and attention to detail
• Ability to perform effectively in a fast-paced environment
• Passion for food, hospitality, and continuous learning
• Good spoken English
• Right to Work in the UK

What to expect

• Full time position based on a 40 hour working week
• Five shifts per week across a rotating schedule
• Exposure to multiple dining concepts including Coopers Cut, In Room Dining, and Rotunda
• Flexibility required across mornings, evenings, weekends, and public holidays
