We are looking for a Pastry Sous Chef for a luxury boutique resort in the Caribbean. This is a hands-on operational pastry leadership role responsible for supporting the management of the pastry team and overseeing day-to-day pastry and baking operations. The ideal candidate is a creative, structured, and people-focused pastry leader with a proven track record in luxury hotels, resorts, fine dining, and villa environments.
- Support the management of all pastry operations, maintaining the highest standards of quality, creativity, and presentation
- Oversee the preparation and presentation of pastries, breads, desserts, and daily production across all service periods
- Execute recipes and menus with precision while bringing creativity to daily specials and seasonal offerings
- Lead, coach, and develop the pastry team, strengthening junior team members and building a high accountability culture
- Manage ordering, requisitioning, par stock, inventory, and cost control with a disciplined approach to waste and spoilage reduction
- Ensure full compliance with food safety, hygiene, and kitchen administration standards
- Plan ahead, anticipate operational challenges, and drive a structured, efficient approach to daily pastry operations
- Support sustainable pastry practices and responsible cost management
- Proven experience as a Pastry Sous Chef or senior pastry leader within a luxury hotel, resort, fine dining, or villa environment
- Strong technical pastry skills across breads, viennoiserie, patisserie, and desserts
- Creativity with daily specials and an ability to adapt to local and seasonal ingredients
- Strong people management skills with a track record of developing pastry teams
- A structured, organized, and forward-thinking approach to pastry operations
- Knowledge of food safety, cost control, and sustainable culinary practices is a strong advantage
- Caribbean experience is preferred
