Almost half of the Yellowstone summer staff work for the Food and Beverage Operation! Job Summary:
The Kitchen Closing Crew is responsible for the complete shutdown, preservation, and winterization of all kitchen facilities at the end of the operating season. This position ensures that equipment, food inventories, utilities, facilities, and storage areas are cleaned, protected, documented, and secured to prevent damage during the off-season. Success in this role requires exceptional attention to detail, strong organizational skills, and the ability to follow comprehensive closure procedures with minimal supervision. This position will also support covering scheduled shifts in the kitchens that are not into closing procedures.

Responsibilities
Deep Cleaning & Sanitation
- Perform a complete top-to-bottom cleaning of the kitchen, prep areas, storage rooms, walk-in coolers, freezers, and dishwashing areas.
- Degrease cooking equipment, hoods, vents, walls, ceilings, and floors.
- Remove all food residue and eliminate potential pest attractants.
- Clean and sanitize shelving, storage racks, carts, and worktables.
- Ensure all drains are cleaned, sanitized, and treated according to company procedures.
Equipment Shutdown & Preservation
- Thoroughly clean and dry and sanitize all cooking equipment.
- Replace all parts and pieces to the equipment they belong to.
- All properly shut down ovens, ranges, fryers, grills, steamers, kettles, smokers, and specialty equipment according to manufacturer guidelines are to be deeply cleaned and reassembled.
- Drain and clean fryers and dispose of oil properly. Replace all parts and wrap for storage.
- Empty, clean, and leave ice machines in seasonal shutdown mode. Ensure all parts are attached.
- Clean and leave refrigeration equipment prepared for seasonal storage.
- Disconnect, cover, or protect equipment as directed.
- Report damaged or malfunctioning equipment requiring offseason repair.
Food Inventory & Storage
- Conduct a complete food inventory.
- Transfer reusable products to designated locations.
- Enter all inventory into the transfer sheet on the share folder and send a copy to the support office.
- Properly dispose of expired or unusable food. Complete the waste log and save it into the share folder.
- Label and document remaining inventory.
- Ensure all food storage areas are clean and pest-free.
- Rotate and organize approved long-term storage products.
Inventory & Asset Management
- Count and document all smallware’s and kitchen equipment.
- Organize and secure utensils, cookware, china, glassware, and serving equipment.
- Package and label seasonal equipment for storage.
- Document missing or damaged assets.
Documentation
- Complete all seasonal closure checklists.
- Record equipment condition reports.
- Document maintenance requests.
- Photograph completed closure areas when required.
- Submit inventory and closure reports to management.
Facility Security
- Verify all food has been removed or stored properly.
- Lock all storage rooms and secure high-value equipment.
- Ensure all utilities have been shut down according to procedures.
- Complete final building walkthrough with management.
- Verify all doors, windows, and access points are secured.
Qualifications
- Previous commercial kitchen experience required.
- Experience with seasonal operations preferred.
- Knowledge of food safety, sanitation, and equipment maintenance.
- Ability to safely operate commercial kitchen equipment.
- Strong organizational and documentation skills.
- Ability to work independently and complete detailed assignments.
- Ability to follow detailed written procedures and checklists.
- Strong attention to detail and commitment to quality.
- Excellent time management and teamwork skills.
- Ability to lift and carry up to 50 pounds.
- Able to work alone at times while keeping on task.
Physical Requirements include:
- Lift up to 75 pounds.
- Stand, bend, kneel, climb ladders, and reach overhead frequently.
- Push and pull heavy carts and equipment.
- Work in hot, cold, dusty, and wet environments.
- Ability to perform physically demanding cleaning tasks over extended periods.
