Head Chef – Award-Winning Gastro Pub

Cotswolds | £42,000–£44,000 + Approx. £12,000 Tronc + Profit Share

An exciting opportunity for an experienced Head Chef to take the lead at one of the Cotswolds’ most respected independent gastro pubs.

We’re recruiting for a Head Chef to join a highly regarded, Michelin-recognised gastro pub with an excellent reputation for seasonal, ingredient-led cooking, strong local suppliers and an uncomplicated approach to great food.

This is a busy pub with rooms, serving up to 100 covers per service, with a well-established reputation within the industry. The kitchen is built around fresh, seasonal produce and quality cooking, and the successful Head Chef will have the opportunity to build on those foundations and put their own stamp on the menu.

You’ll lead a team of 6–7 chefs, creating a positive and motivated kitchen culture while working closely with the owners on menus, daily specials and the ongoing development of the food offering.

The Role

We’re looking for a Head Chef who is both creative and commercially minded, with the confidence to lead a busy kitchen while maintaining consistently high standards.

You’ll be responsible for:

• Leading, developing and motivating a team of 6–7 chefs
• Creating seasonal, produce-led menus and daily specials
• Working closely with the owners on the direction of the kitchen
• Maintaining excellent food quality and consistency
• Managing kitchen GP and food costs, with a target of 70%+ GP
• Managing labour effectively, targeting around 32%
• Driving sales through excellent food and strong kitchen leadership
• Maintaining a positive, organised and professional kitchen environment
• Making the most of exceptional local produce and suppliers

• £42,000–£44,000 salary
• Approx. £12,000 tronc

The Ideal Candidate

We’re looking for an established Head Chef or strong Sous Chef ready to take the next step, ideally with experience in a high-quality gastro pub, restaurant or destination dining environment.

You’ll need to be a confident leader with excellent fresh food credentials, strong commercial awareness and the ability to balance creativity with the practicalities of running a profitable, high-volume kitchen.
