Essential Responsibilities
- Assist the Executive Chef in planning, preparing, and executing banquet and catering menus.
- Lead banquet culinary operations for events ranging from intimate gatherings to large-scale functions.
- Ensure all food is prepared and presented according to company standards, recipes, and quality expectations.
- Supervise, coach, and develop banquet cooks and stewards while fostering a positive team environment.
- Coordinate production schedules to ensure timely execution of all banquet functions.
- Monitor food quality, consistency, and portion control throughout service.
- Maintain appropriate inventory levels and assist with ordering and receiving products.
- Minimize food waste and manage labor efficiently to meet financial goals.
- Ensure compliance with all food safety, sanitation, and health department regulations.
- Assist with menu development and seasonal offerings.
- Work collaboratively with the Banquets, Sales, and Operations teams to ensure flawless event execution.
- Step into restaurant culinary operations as needed to support overall hotel success.
Qualifications
- Minimum of 2 years of supervisory culinary experience, preferably in banquet or hotel operations.
- Previous luxury hotel or upscale catering experience strongly preferred.
- Strong knowledge of banquet production, plating, and high-volume execution.
- Excellent leadership, communication, and organizational skills.
- Ability to multitask and perform under pressure while maintaining attention to detail.
- Knowledge of food cost controls, inventory management, and labor management.
- ServSafe Certification preferred (or ability to obtain upon hire).
- Flexible schedule including mornings, evenings, weekends, and holidays.
