About the job

Based at the Mandarin Oriental Downtown, Dubai within the Banquets section in Dubai, the Demi Chef de Partie is responsible to carry out and contribute to delivering exceptional dishes that meet our world-class standards of taste, presentation, and food safety. Demi Chef de Partie reports to Chef de Partie.

As a Demi Chef de Partie, you will be responsible for the following duties:

• Assist the Chef de Partie in the preparation and executive of high-quality dishes, and mise en place other items.
• Ensure all ingredients and recipes are followed precisely, maintaining consistency and excellence.
• Monitor stock and inventory levels in your section, ensuring timely requisitions and minimal waste.
• Collaborate with the team in the development of new recipes.
• Support broader kitchen operations and cross-functional tasks as needed
• Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.

As a Demi Chef de Partie, we expect from you: 

• High school diploma or equivalent; formal culinary training is an advantage.
• Minimum of 2 years’ experience as Demi Chef de Partie in a main kitchen or hot kitchen section of a 5-star hotel or high-end restaurant.
• Solid knowledge and hands-on experience in banquet/main kitchen.
• Strong understanding of HACCP and food safety practices.
• Effective communication skills in English (verbal & written); knowledge of additional languages is a plus.
• Previous experience in hotel pre-opening or renovation projects is highly desirable.
• Creativity, passion for cooking, and a team-oriented mindset.
