ABOUT THE ROLE
We are urgently looking for a Chef de Cuisine specializing in authentic Italian cuisine for a luxury hotel in Abu Dhabi. This is a hands-on kitchen leadership role for a passionate Italian culinary professional with deep roots in traditional Italian cooking — particularly Southern Italian cuisine. The right candidate brings technical mastery, creative vision, and the ability to lead a kitchen to the highest standards.

 

• Lead all kitchen operations for the Italian outlet, ensuring exceptional quality, authenticity, consistency, and presentation
• Design and execute menus rooted in authentic Italian culinary traditions, with a strong emphasis on Southern Italian cuisine
• Train, develop, and inspire the kitchen team to achieve operational and service excellence
• Manage food costing, inventory, ordering, and waste reduction to maintain kitchen profitability
• Ensure full compliance with food safety, hygiene, and kitchen organisation standards
• Collaborate with F&B leadership to align culinary output with the property's brand and guest expectations

 

• Italian national with a strong background in Southern Italian cuisine - this is essential for this role
• Proven experience as a Chef de Cuisine or Senior Sous Chef in a luxury hotel or high-end Italian restaurant
• Deep knowledge and passion for authentic Italian culinary traditions, ingredients, and techniques
• Strong leadership and kitchen management skills
• Solid understanding of food costing, menu engineering, and kitchen administration
• Single status preferred
• Available to relocate to Abu Dhabi immediately
