Based at Mandarin Oriental, Costa Navarino within the Culinary Department in Pylos, Messenia, Greece, the Pizza Chef - Senior Sous Chef leads the Pizza Sapienza by Daniele Cason culinary team, follows and oversees recipe execution, demonstrates expertise in pizza dough preparation, and ensures the consistent delivery of high-quality products while maintaining the highest standards of quality, hygiene, and food safety. The Pizza Chef - Senior Sous Chef reports to the Executive Chef.
As Pizza Chef - Senior Sous Chef, you will be responsible for the following duties:
Oversee the daily operation of the pizza station, ensuring full compliance with company policies, hotel standards, and operating procedures.
Prepare and manage all pizza production, including dough and sauces, while ensuring cooking stations are properly sanitized, stocked, and equipped.
Lead, train, and support culinary team members to ensure consistency, quality, and adherence to Executive Chef standards across all dishes.
Monitor food production, inventory, supplies, equipment maintenance, and monthly par stock adjustments to maintain efficient operations and profitable food costs.
Conduct quality control checks on all pizzas and maintain the highest standards of cleanliness, hygiene, and food safety throughout the kitchen.
Collaborate with the Executive Chef, F&B leadership, restaurant managers, and kitchen teams on menu development, operational efficiency, and cross-departmental teamwork.
As Pizza Chef - Senior Sous Chef, we expect from you:
Valid EU Passport or Hellenic Residence Permit.
Globally recognized Culinary Qualification.
3-5 years of professional experience in a similar role.
Computer literacy, including Microsoft Office (Excel, Word, PowerPoint).
Fluency in English.
