Schedule: Monday - Friday, with Saturday's as needed:

*3rd Shift: 10:00 pm - 6:30 am

Work Location: 5310 Historic Old Hwy 90, San Antonio, TX 78227

Salary, based on experience and other qualifications: $26.22 per hour plus $1.50 shift differential

Duties and Responsibilities: 

This list of duties and responsibilities is not all inclusive and may be expanded to include other duties and responsibilities as management may deem necessary from time to time. 

• Perform pre inspection of Kettles/Pumps/Kitchen/ area prior to operation.
• Operate the Kitchen/Kettles/Pumps/RWS System in a safe and efficient manner.
• Follow work instructions on process order. (ex. Blended dice, vinegar, sautéed onions).
• Ensure magnet checks are completed hourly and report any findings.
• Follow all published SOP’s.
• Properly sets up the Kettles/Pump/Kitchen area with all necessary components /materials and scanned in SAP (ex. Capsicum to be scanned in SAP).
• Properly track and report all finished product in RWS and on batch sheet paperwork.
• Properly track and report all scrap in batch sheet and report to the Supervisor/Lead.
• Ensure all materials brought into the kitchen are properly verified to the process order and all drum tags are accounted for.
• Ensure all Product reprocess is used in a timely manner and at the proper mix ratio.
• Ensure product is cooked to the proper temperature and samples are taken to the minilab for testing/approval for each blend produced.
• Must adhere to all safety policies.
• Ensure that no extraneous materials are released into the system.
• Ensure samples are taken to the minilab for testing of each tote that is opened.
• Immediately notify supervisor and QA of any food safety issues.
• Complete daily abbreviated clean, chemical boil outs, and replacing scrapper blades if damage is found. Must be confined space trained in order to enter a kettle.
• Perform Sanitation activities to include removal of bottom valves, disassembly of pumps, replace worn parts on pumps, and reassembly of bottom valves along with the pumps.

• Replace chart recorder paper when needed and report any discrepancies with the chart recorder immediately to Supervisor/Lead.
• Must be able to make proper adjustments to batches/blends when the line is down to avoid MUV loss. (i.e. identify downtime and stop/pause the cooking process if needed.)
