Es responsable de la ejecución en las bases del Departamento, de la producción de comidas para todas las líneas de negocio, llevando la dirección del personal a su cargo para que cumplan con sus funciones. Controla el que todos los servicios sean de buena calidad y presentación, de acuerdo con lo pactado con el cliente a través de las especificaciones (aerolíneas, industriales, eventos), además, es el encargado de mantener y mejorar la calidad de los servicios que se brindan, liderar de manera humana al personal a cargo y colaborar activamente con el Chef Ejecutivo en abrir nuevas oportunidades de negocio.
