Position Summary
The Commis Pastry Chef assists the Pastry Team in the preparation, production, and presentation of high-quality pastries, desserts, breads, cakes, viennoiseries, and other baked products in accordance with the luxury resort's standards. The role requires attention to detail, commitment to food safety, creativity, and a passion for delivering exceptional guest experiences.
The Commis Pastry Chef supports the daily operations of the pastry kitchen and contributes to maintaining the highest standards of quality, consistency, hygiene, and efficiency.
Key Responsibilities
Food Preparation & Production
- Assist in the preparation and production of pastries, desserts, cakes, chocolates, petits fours, breads, and bakery items.
- Follow standardized recipes, preparation methods, and portion controls.
- Prepare ingredients and mise en place according to production requirements.
- Support buffet, à la carte, banqueting, afternoon tea, and special event pastry operations.
- Participate in the preparation of seasonal menus and festive offerings.
- Ensure consistency in taste, texture, appearance, and presentation of all products.
Quality Standards
- Maintain luxury hospitality standards in all pastry and bakery preparations.
- Ensure all products are fresh, visually appealing, and meet resort specifications.
- Assist in monitoring product quality throughout production and service.
- Report any quality concerns immediately to senior pastry chefs.
Hygiene & Food Safety
- Adhere to HACCP standards and food safety procedures at all times.
- Maintain cleanliness and organization of workstations, equipment, refrigerators, and storage areas.
- Follow proper food handling, labeling, stock rotation (FIFO), and storage practices.
- Comply with all health, safety, and sanitation regulations.
Teamwork & Communication
- Work collaboratively with chefs and kitchen colleagues to ensure smooth daily operations.
- Assist colleagues during peak periods and special events.
- Communicate effectively regarding production schedules, stock requirements, and operational needs.
- Demonstrate a positive attitude and willingness to learn.
Inventory & Cost Control
- Help monitor ingredient usage and minimize waste.
- Inform supervisors of shortages, breakages, or quality issues.
- Handle resort equipment and tools with care.
- Support stock-taking and inventory control activities when required.
Guest Experience
- Maintain a professional appearance and behavior aligned with the resort’s luxury standards.
- Assist in live cooking stations, dessert displays, and guest-facing events when required.
- Contribute to creating memorable culinary experiences for guests.
Qualifications & Experience
Essential
- Certificate, Diploma, or Professional Qualification in Pastry, Bakery, Culinary Arts, or related field.
- Minimum 1 year of pastry or bakery experience in a hotel, resort, restaurant, or bakery environment.
- Basic knowledge of pastry techniques, baking methods, and dessert preparation.
- Understanding of food safety and hygiene principles.
Preferred
- Previous experience in a luxury hotel or resort.
- Experience with international pastry and bakery products.
- HACCP or Food Safety certification.
