Four Seasons Hotel and Residences is part of a 65-storey mixed-use tower that will include 242 Four Seasons Private Residences, 27 serviced apartments, a 209-key Four Seasons Hotel and a six- floor of 250,000 square foot luxury retail podium, collectively known as Four Seasons Place Kuala Lumpur. Senior Chef de Partie (Indian Cuisine) - All Day Dining Kitchen
Four Seasons Hotel Kuala Lumpur is seeking a talented and passionate Senior Chef de Partie (Indian Cuisine) to join the All Day Dining Kitchen team. The successful candidate will be responsible for overseeing the preparation, production, and presentation of authentic and contemporary Indian cuisine while maintaining the highest standards of food quality, consistency, hygiene, and guest satisfaction. This role supports the Sous Chef and Chef de Cuisine in leading culinary operations and mentoring junior team members to deliver exceptional dining experiences reflective of the Four Seasons brand.
What You Will Do:
Manage the daily operations of the Indian Cuisine section within the All Day Dining Kitchen.
Prepare, cook, and present Indian dishes in accordance with established recipes, quality standards, and presentation guidelines.
Ensure consistency in taste, portioning, and presentation of all menu offerings.
Support menu development, special promotions, seasonal offerings, and buffet presentations.
Supervise and guide Commis Chefs and Demi Chef de Parties, providing training and coaching as needed.
Monitor food preparation processes to ensure efficiency, quality, and compliance with operational requirements.
Maintain high standards of food hygiene, sanitation, and workplace safety in accordance with HACCP and hotel policies.
Ensure proper storage, labeling, handling, and rotation of food products following FIFO standards.
Assist in controlling food costs through effective portion control, waste management, and inventory practices.
Monitor stock levels and coordinate requisitions to ensure adequate supplies and ingredients are available.
Conduct quality checks on ingredients and finished products to maintain culinary excellence.
Collaborate with other kitchen sections and Food & Beverage teams to ensure seamless service delivery.
Support banquet events, special functions, and high-volume operations when required.
Report equipment issues, maintenance requirements, and operational concerns promptly.
Foster a positive team environment aligned with Four Seasons values and service culture.
What You Bring:
Culinary Diploma, Certificate, or equivalent professional culinary training preferred.
Minimum 4 to 6 years of culinary experience in a luxury hotel, upscale restaurant, or premium hospitality environment.
At least 2 years of experience specializing in Indian cuisine, including North Indian and/or South Indian culinary techniques.
Proven experience in a Chef de Partie or senior supervisory kitchen role.
Strong knowledge of authentic Indian spices, ingredients, cooking methods, tandoor operations, curries, breads, and regional specialties.
Excellent understanding of food safety, sanitation, HACCP, and kitchen best practices.
Strong leadership, coaching, and team development skills.
Ability to perform effectively in a fast-paced, multicultural environment.
Strong organizational skills with attention to detail and quality.
Flexibility to work rotating shifts, weekends, and public holidays as required by hotel operations.
Excellent reading, writing, and oral proficiency in English language.
Must be able to speak, read, and write Bahasa Malaysia.
Must have the right to work in Malaysia.
