Bottleshop Manager

North Byron Hotel | Byron Bay, NSW

Lead the retail operation at one of Byron Bay’s most exciting hospitality venues.

North Byron Hotel is looking for an experienced and commercially minded Bottleshop Manager to lead the day-to-day performance of our retail business. Based at 61 Bayshore Drive, you’ll play a key role in delivering an outstanding customer experience, developing a high-performing team and growing the retail operation.

Working closely with the Licensee, you’ll oversee retail performance, beverage offerings, team engagement, supplier relationships, marketing activity and operational standards.

What you’ll do

  • Lead and motivate the retail team to deliver exceptional customer service

  • Drive sales, profitability, labour performance and expense control

  • Manage beverage listings, COGS, stock-related initiatives and supplier relationships

  • Review financial performance and identify opportunities to improve results

  • Develop and implement operational procedures and service standards

  • Build strong relationships with guests, team members, suppliers and the local community

  • Support the delivery of promotions, events and retail marketing initiatives

  • Monitor competitor activity and identify opportunities for growth

  • Recruit, train, coach and develop team members and leaders

  • Conduct team meetings, performance reviews and people-planning activities

  • Champion North Byron Hotel’s service standards, values and F&B non-negotiables

  • Ensure compliance with workplace health and safety, quality and regulatory requirements

  • Create a positive team culture that supports engagement, retention and continuous improvement

What we’re looking for

You’ll be an experienced hospitality or retail leader with a strong understanding of beverage operations and the ability to balance exceptional service with commercial performance.

You’ll bring:

  • Experience managing a bottleshop, retail liquor operation or high-volume hospitality department

  • Strong knowledge of beverage products, service standards and customer experience

  • Proven financial and commercial acumen, including exposure to budgets, COGS and P&L reporting

  • Experience leading, coaching and developing high-performing teams

  • Strong communication, organisation and problem-solving skills

  • Confidence working with suppliers, marketing partners and local stakeholders

  • A proactive approach to identifying opportunities and implementing change

  • A genuine passion for creating memorable customer experiences
