About the Role

Our client is opening a new multi-cuisine restaurant in Hargeisa and is seeking a skilled Head Chef to lead the kitchen, serving Italian (pizza, pasta), Indian (curries), and Chinese dishes, salads, and grills.
The Head Chef will run a halal kitchen, control food costs, and train a locally recruited kitchen team, playing a central role in the restaurant's pre-opening menu launch.

Key Responsibilities

• Lead the kitchen of a new multi-cuisine restaurant.
• Prepare and oversee dishes across Italian, Indian, and Chinese cuisines.
• Run a halal kitchen (no pork, no alcohol in cooking).
• Write recipe cards, portion and cost dishes accurately.
• Control food cost across the kitchen.
• Train and supervise locally recruited kitchen helpers.

Qualifications & Experience

• Minimum 5 years' experience in a hotel or high-volume restaurant kitchen.
• Demonstrated competence across three cuisines in one kitchen, including:
• Italian: pizza dough, arrabiata, alfredo
• Indian: chicken tikka masala, butter chicken, korma, beef madras, fish curries
• Chinese: crispy chilli beef, honey garlic chicken, sweet & sour fish
• Halal kitchen experience.
• Valid food safety/hygiene certificate.
• Diploma in Culinary Arts (Kenya Utalii College or equivalent) is an added advantage.

• Is ready to relocate and live on-site in Hargeisa for a 2-year assignment.

Candidates must submit: CV with photo, academic/professional certificates, food safety/hygiene certificate, passport copy (minimum 18 months' validity), Certificate of Good Conduct, and two employer references with contact details.
Practical assessment: candidates will cook three dishes from the client's menu (one curry, one Chinese dish, one pizza), recorded on video or observed in person. Practical performance takes precedence over certificates.
