The latest addition to the city’s dramatic skyline and a vibrant hub for both business and leisure travelers, Four Seasons Hotel Kuala Lumpur will be conveniently located in close proximity to the city’s major attractions, including the Petronas Twin Towers and the Kuala Lumpur City Centre (KLCC). Chief Baker
The Chief Baker is responsible for leading the hotel’s bakery operation and delivering consistently exceptional breads, viennoiserie, breakfast bakery items, pastries and other baked products in line with Four Seasons standards. The role combines hands-on baking expertise with strong leadership, production planning, quality control and cost management.
Working closely with the Executive Pastry Chef and Culinary leadership, the Chief Baker will oversee daily bakery production supporting the hotel’s restaurants, breakfast service, afternoon tea, in-room dining, events and takeaway offerings. Four Seasons Hotel Kuala Lumpur operates a diverse dining portfolio, including Curate’s daily breakfast buffet, The Lounge’s afternoon tea and in-room dining.
What You Will Do:
Lead, supervise and develop the Bakery team, creating a culture of excellence, teamwork and continuous learning.
Plan and organize daily bakery production according to occupancy, outlet requirements, events and forecasted business levels.
Produce and maintain consistently high standards of breads, sourdoughs, baguettes, rolls, brioche, croissants, Danish pastries, breakfast pastries, cakes and other bakery products.
Develop innovative bakery concepts while maintaining classical techniques and Four Seasons quality standards.
Work closely with the Executive Pastry Chef to develop seasonal products and concepts that reflect Kuala Lumpur’s diverse culinary identity and incorporate high-quality local ingredients.
Ensure consistency in recipes, portioning, presentation, taste, texture and production methods.
Establish and maintain accurate recipes, production sheets and par levels.
Monitor food costs, yields, wastage and productivity, taking corrective action where required.
Ensure proper storage, labelling, stock rotation and handling of ingredients in accordance with food safety standards.
Maintain strict standards of hygiene, sanitation, HACCP and workplace safety throughout the bakery.
Coordinate closely with Culinary, Stewarding, Purchasing and Food & Beverage teams to ensure smooth daily operations.
Support high-volume production for breakfast, buffets, afternoon tea, banquets, special events, in-room dining and takeaway requirements.
Train and coach colleagues in bakery techniques, product knowledge, equipment use and safe working practices.
Monitor equipment condition and coordinate preventive maintenance and repairs with the relevant departments.
Stay current with international bakery trends, techniques, ingredients and equipment, bringing relevant innovations to the operation.
Participate in menu development, tastings and special culinary projects as required.
Maintain a hands-on presence in the bakery and lead by example during daily production.
What You Bring:
Diploma or professional qualification in Pastry Arts, Baking, Culinary Arts or a related field.
Minimum 5–7 years of professional bakery experience, preferably within a luxury hotel, high-end restaurant, artisan bakery or comparable hospitality environment.
Proven experience supervising or leading a bakery/pastry production team.
Strong technical knowledge of artisan breads, viennoiserie, laminated doughs, sourdough fermentation and contemporary bakery techniques.
Excellent understanding of food safety, hygiene, HACCP and sanitation standards.
Strong knowledge of recipe costing, production planning, yield management and inventory control.
Creative, detail-oriented and highly quality-conscious, with a passion for exceptional bakery products.
Strong communication, organizational and people-management skills.
Ability to work effectively under pressure in a high-volume luxury hospitality environment.
International hotel or luxury hospitality experience is strongly preferred.
Flexibility to work rotating shifts, weekends, and public holidays as required by hotel operations.
Excellent reading, writing, and oral proficiency in English language.
Must be able to speak, read, and write Bahasa Malaysia.
Must have the right to work in Malaysia.
