ABOUT THE ROLE
MML Hospitality is seeking an experienced Sushi Sous Chef to join the team at Neighborhood Sushi in Austin, TX.
The ideal candidate is a skilled sushi professional with a strong foundation in Japanese cuisine, exceptional knife skills, and demonstrated proficiency in nigiri preparation. This individual will work closely with the Executive Chef to support daily operations, maintain culinary standards, and lead the sushi team through consistent, high-quality execution.
WHAT YOU'LL DO
- Assist in overseeing daily sushi bar operations, ensuring quality, consistency, and efficiency.
- Prepare and execute nigiri, sashimi, maki, and other Japanese dishes to established standards.
- Demonstrate proficiency in nigiri preparation, including fish slicing, rice handling, and presentation.
- Oversee fish fabrication, seafood handling, and proper storage procedures.
- Train, mentor, and support sushi team members in culinary techniques and service standards.
- Maintain consistency in food preparation, portioning, and presentation.
- Assist with inventory management, ordering, and food cost control.
- Ensure compliance with food safety, sanitation, and kitchen cleanliness standards.
- Collaborate with the culinary leadership team on menu development and daily specials.
- Support a positive, organized, and collaborative kitchen environment.
WHAT WE'RE LOOKING FOR
- 3+ years of professional sushi experience in a restaurant environment.
- Proven proficiency in nigiri preparation and execution is required.
- Strong knowledge of Japanese cuisine, sushi techniques, and fish fabrication.
- Excellent knife skills and understanding of seafood quality and handling.
- Previous experience in a sushi leadership or supervisory role preferred.
- Ability to maintain quality and consistency in a high-volume restaurant environment.
- Strong organizational, communication, and leadership skills.
- Understanding of inventory management, food costs, and kitchen operations.
- Availability to work evenings, weekends, and holidays as needed.
