Sushi Head Chef | Shanghai Me, London
Shanghai Me is looking for an experienced Sushi Head Chef to lead our sushi operation at one of London’s leading luxury Pan-Asian dining destinations.
Working closely with the senior culinary team, you’ll take ownership of the sushi section, overseeing the preparation and presentation of exceptional sushi and sashimi while leading and developing your team. This is an exciting opportunity for a passionate sushi specialist to bring technical expertise, creativity and strong leadership to a premium, fast-paced kitchen.

What You'll Do:
Lead and oversee the daily operation of the sushi section, ensuring exceptional quality, consistency and presentation
Prepare and execute high-quality sushi and sashimi dishes to Shanghai Me standards
Manage, train and develop the sushi team, maintaining a positive and professional kitchen culture
Ensure the highest standards of fish handling, freshness, portion control and product quality
Oversee daily mise en place, stock management and ordering to ensure efficient kitchen operations
Maintain strict hygiene, HACCP and food safety standards at all times
Work closely with the senior culinary team to ensure smooth service and consistently high standards
