  • Establish wine service standards, including storage, temperature, decanting, glassware, and presentation.
  • Monitor wine sales, product mix, pricing, and profitability while conducting ongoing wine education for service teams.
3. Beverage Production & Operational Excellence
  • Establish standardized beverage recipes, preparation methods, batch specifications, yields, and presentation standards.
  • Coordinate centralized beverage production with culinary and Bar Kitchen teams, including pre-batched cocktails and house-made ingredients.
  • Oversee frozen beverage systems, production planning, quality control, and consistency.
  • Maintain appropriate production procedures, labeling, storage, shelf-life, and sanitation standards.

  • Support new outlet openings, beverage program launches, and operational improvements.
4. Inventory, Purchasing & Cost Control
  • Oversee beverage inventory and cost controls in close collaboration with the Property Purchasing Manager.
