Job Description Summary
Oversees the entire front of house guest experience with regard to Food and Beverage Service and related activities. Responsible for overall quality, cleanliness and service delivery of all food and beverage related products and amenities. Brings innovation and creative direction to improving the guest and staff experiences. Provides leadership and oversight of the Food and Beverage Management team in the absence of the Director of Food and Beverage.Job Description
Essential Functions:
Oversees all aspects of operations for Front of House Food and Beverage, Room Service, and Conference Services.
Drives the service culture that delivers continuous improvement methods and results.
Oversees financial matters for the departments.
Assists in annual budgets for departments, and works within that budget by managing payroll, beverage costs, and other resources effectively.
Oversees payroll allocation for departments; reviews daily and bi-weekly timesheets.
Reviews weekly schedules for departments, ensuring hours are within budget and aligned with service standards.
Provides technical oversight of key functions of the point of sale system and the interface with hotel property management software.
Ensures accurate and secure cash handling of all areas in food and beverage.
Meets with clients and coordinators to determine the best beverage menus for their function.
Creates, develops, costs, and establishes standards for all beverage menus.
Oversees quality and presentation of all food and beverage products. Constantly evaluates service quality provided by the staff.
Evaluates the presentation and service of coffee breaks, bars, and conference setups.
Ensures that the service and presentation standards are maintained through the staff.
Meets with clients, coordinators, chefs, and staff to ensure meetings and special events are operating efficiently.
Communicates with all departments to ensure that sets reflect the correct information and that the various departments have not overlooked a scheduled function.
Ensures consistency of services by inspecting areas of responsibility to ensure stewardship and guest expectations are in line with the vision.
Monitors cleanliness, upkeep, and ambiance of the function areas and the equipment used by the service and Conference staff.
Oversees staffing levels in all related service areas.
Participate in weekly Coordination meetings and disseminate information to the staff.
Oversees security procedures concerning guest injuries, intoxicated guests, liquor laws, on/off property vehicle accidents, trespassing procedures, damage or theft of conference center or guest property, and anticipates possible volatile situations throughout the conference center.
Required Education, Knowledge, Skills, Abilities:
Bachelor’s degree in a related field plus five years of managerial experience in an upscale hospitality facility or restaurant environment, or an equivalent combination of experience and education.
Experience in 4 or 5-star Lodging or Dining venues or like service culture environments.
Ability to provide effective leadership to department managers.
Ability to delegate tasks to proper departments.
Excellent interpersonal skills, including customer service skills.
Ability to make independent judgment decisions.
Ability to resolve conflicts among guests and/or employees.
Knowledge of items such as alcohol, cigars, coffee products, etc.
Demonstrated knowledge of wine.
Knowledge of basic Accounting procedures, such as budgeting and purchasing tasks.
Highly organized; must be able to plan ahead so as to maximize efficiency based on available resources.
Knowledge of accommodations, dining/ meeting facilities, and support services.
Ability to organize space and equipment.
Ability to communicate effectively, both orally and in writing.
Ability to communicate effectively in the English language.
Ability to schedule employees concerning scheduled events, and meeting budget guidelines.
Ability to train staff members on a variety of subject matter.
Ability to work any shift.
Valid driver's license with good driving record; must be insurable.
Accountabilities:
The position requires the management of others through subordinates who are also supervisors, including organizing and controlling Food and Beverage areas and Maintenance and Safety areas, participating in establishing budget plans, forecasting staffing requirements, and formulating policies and procedures.
Supervises and delegates responsibilities for the following direct reports: Assistant F&B Managers, F&B Managers, Lead Servers, and Conference Leads.
Accountable for fiscal responsibility for food and beverage departments.
Physical Requirements:
Ability to perform medium work: Exerting up to 50 pounds of force occasionally.
Balancing, stooping, reaching, standing, walking, lifting, grasping, talking, hearing and repetitive motions.
Visual acuity to perform an activity where the seeing job is at or within arm’s reach.
Environmental Conditions:
Subject to both environmental conditions: activities occur both inside and outside.
