Four Seasons Hotel and Residences is part of a 65-storey mixed-use tower that will include 242 Four Seasons Private Residences, 27 serviced apartments, a 209-key Four Seasons Hotel and a six- floor of 250,000 square foot luxury retail podium, collectively known as Four Seasons Place Kuala Lumpur. Senior Chef de Partie - Pastry

The Senior Chef de Partie – Pastry is responsible for supporting the Pastry Chef and Sous Chef in the daily operations of the pastry kitchen, ensuring the consistent preparation and presentation of high-quality pastries, desserts, cakes, chocolates, and plated desserts in accordance with Four Seasons standards. This role oversees a designated pastry section, maintains exceptional product quality and food safety standards, mentors junior team members, and contributes to creating memorable dining experiences for guests.

What You Will Do:

• Supervise the daily operations of the assigned pastry section, ensuring efficient production and service.

• Prepare and present a variety of pastries, desserts, cakes, petit fours, chocolates, confections, and plated desserts to the highest quality standards.

• Ensure consistency in taste, texture, presentation, and portioning across all restaurant outlets, banquets, in-room dining, and special events.

• Assist the Pastry Chef and Sous Chef in developing seasonal dessert menus, specialty items, and innovative pastry creations.

• Maintain standardized recipes and production methods to ensure consistency and quality.

• Monitor ingredient quality, stock levels, and proper storage while minimizing waste and supporting cost control initiatives.

• Ensure full compliance with food safety, hygiene, sanitation, and HACCP standards at all times.

• Train, mentor, and supervise Demi Chef de Parties, Commis Chefs, and apprentices, fostering teamwork and continuous development.

• Coordinate daily production schedules to meet operational requirements while maintaining efficiency and quality.

• Ensure pastry equipment and workstations are maintained in a clean, organized, and safe condition, reporting maintenance issues promptly.

• Support inventory management, stock rotation (FIFO), requisitioning, and receiving of pastry ingredients.

• Collaborate with culinary and service teams to deliver exceptional guest experiences.

• Uphold Four Seasons' service culture, professionalism, and commitment to excellence.

What You Bring:

• Diploma or certification in Pastry Arts, Culinary Arts, or a related field preferred.

• Minimum 4–6 years of experience in a pastry kitchen within a luxury hotel, fine dining restaurant, or premium hospitality establishment, including at least 2 years in a supervisory role.

• Strong expertise in pastries, cakes, plated desserts, chocolates, sugar work, confectionery, and dessert presentation.

• Proven ability to supervise, coach, and motivate a multicultural culinary team.

• Sound knowledge of food safety regulations, HACCP principles, and kitchen sanitation standards.

• Strong organizational, time management, and problem-solving skills.

• Excellent attention to detail, creativity, and commitment to delivering consistent, high-quality pastry products.

• Effective communication and interpersonal skills with the ability to collaborate across departments.

• Flexibility to work rotating shifts, weekends, and public holidays as required by hotel operations.

• Must be able to speak, read, and write Bahasa Malaysia and English.

• Must have the right to work in Malaysia.
