Nura at Amanpuri is a beachfront dining destination inspired by the spirit of the sea and the essence of Mediterranean cuisine. Set on the pristine sands of Pansea Beach, offering a relaxed yet refined culinary experience where the rhythm of the waves meets elegant seaside dining. Centered around Mediterranean grilling, the menu features freshly caught seafood, premium local meats, and vibrant Spanish-inspired dishes, from tapas to seasonal salads, all crafted for sharing. With its focus on fire-cooked flavours, fresh ingredients, and laid-back luxury, Nura delivers a sophisticated yet effortless dining experience in an unparalleled beachfront setting.

Responsibilities and Duties: 

  • Lead and oversee all culinary operations at Nura, ensuring exceptional quality, consistency, and presentation aligned with luxury beachfront dining standards.

  • Develop and execute innovative Mediterranean-inspired menus with a focus on seafood, grilling, and shared dining concepts.

  • Manage and inspire the kitchen team, fostering creativity, discipline, and continuous development.

  • Ensure strict compliance with food safety, hygiene, and HACCP standards at all times.

  • Control food cost, inventory, purchasing, and waste to meet financial targets while maintaining premium quality.

  • Collaborate with local suppliers to source the freshest seafood, meats, and seasonal produce.

  • Work closely with F&B service teams to deliver a seamless, relaxed yet refined beachfront dining experience.

Qualifications

  • Proven experience as Chef de Cuisine or Senior Sous Chef in a luxury resort or high-end Mediterranean restaurant.

  • Strong expertise in Mediterranean cuisine, especially seafood, grill techniques, tapas, and shared dining concepts.

  • Excellent leadership and team management skills with experience in multicultural environments.

  • Culinary degree or professional certification preferred, or equivalent extensive experience in luxury dining operations.
