Assistant Bar Manager, One-Ninety Bar

As an Assistant Bar Manager, you will play a key role in leading the bar operation, creating an experience that is polished, intuitive and memorable.
Working alongside the Beverage Manager, you will help shape the day-to-day operation while inspiring the team to deliver thoughtful, consistent and personalised service. From developing people and maintaining service standards to managing operational details and responding to guest needs, you will be a visible leader who leads from the floor and sets the standard through your own example.
This is an opportunity for an experienced Team Leader/Supervisor, or a current Assistant F&B Manager who is ready to take the next step — expanding their leadership capability, strengthening their operational and commercial acumen, and making a meaningful impact on both the guest and employee experience in a luxury brand.
What You Will Do:
Lead from the floor by overseeing daily bar operations and ensuring every guest receives warm, attentive and unobtrusive service.
Inspire and develop the team through coaching, training, pre-shift briefings, performance feedback and ongoing guidance.
Ensure consistent service techniques, grooming, product knowledge and standards are demonstrated.
Build genuine guest relationships, anticipate needs, respond to feedback and confidently manage service recovery and guest concerns.
Work closely with the Beverage Manager and wider F&B leadership team to maintain operational excellence and take responsibility for the outlet in their absence.
Develop a strong understanding of our beverage and food offerings, including ingredients, preparation methods, presentation and service standards.
Support scheduling and manpower planning to balance exceptional service with effective labour management.
Monitor food and beverage usage, inventories, equipment and operating supplies to support cost control and minimise wastage.
Maintain a high standard of cleanliness, presentation, safety and upkeep across the bar and surrounding guest areas.
Oversee daily operational administration including revenue documentation, cash handling, banking, inventories and shift reports.
Ensure accurate use of POS and hotel systems.
Maintain clear communication through daily logs, briefings, meetings and effective collaboration with other departments.
Recognise and thoughtfully navigate challenging situations with professionalism, empathy, and care.
Promote teamwork and foster a positive, respectful and harmonious working environment.
Identify opportunities to improve the guest experience, team effectiveness and operational processes.
What You Bring:
Preferably 2–3 years of experience as a Team Leader, Supervisor or similar role, within a luxury hotel, high-end bar or lounge environment.
Strong knowledge of bar and F&B operations, service standards and guest experience.
Good understanding of beverage operations, cost control, labour management and basic F&B accounting.
A genuine passion for developing people and creating a positive team culture.
Confident communication and interpersonal skills, with the ability to connect with both guests and colleagues.
Strong organisational skills and attention to detail, with the ability to manage multiple priorities in a fast-paced environment.
A proactive, hands-on approach with the confidence to make decisions and take ownership.
Good computer literacy and the ability to work with POS and hotel systems.
Excellent command of written and spoken English.
A calm, solutions-focused mindset, particularly when managing unexpected situations or guest concerns.
