Our restaurant focuses on modern Irish cuisine with a strong emphasis on hyper-local, seasonal ingredients, delivering refined tasting menus and à la carte experiences that showcase creativity, technique, and flawless execution.

We're now recruiting an experienced Sous Chef to join our close-knit kitchen team for the 2026 season (up to December 2026). This is a fantastic chance to immerse yourself in a prestigious property, work with top-quality ingredients, and contribute to unforgettable guest experiences.

Key Responsibilities:

• Support the Head Chef in daily kitchen operations, menu development, and service delivery
• Oversee sections, mentor junior chefs, and maintain high standards of consistency and presentation
• Work with premium, seasonal, and locally sourced produce to create innovative yet approachable dishes
• Ensure adherence to food safety, hygiene, and cost control protocols
• Collaborate with the team to deliver seamless service during busy periods

What we're looking for:

• Proven experience as a Sous Chef (or strong Chef de Partie ready to step up) in fine dining, Michelin-level, or high-end hotel/restaurant kitchens
• Passion for seasonal, local Irish ingredients and modern culinary techniques
• Strong leadership skills with the ability to motivate and develop a small team
• Excellent organisational skills and composure under pressure
• Creative mindset combined with meticulous attention to detail
• Flexibility for seasonal hours, including weekends and evenings
• Right to work in Ireland (EU/EEA or valid work permit)
