We are seeking an energetic and experienced Food and Beverage Director to lead our dynamic food and beverage team. In this pivotal role, you will oversee all aspects of food and beverage operations, ensuring exceptional service, high-quality food production, and leadership of staff and resources. Your leadership will drive the success of our multiple food and beverage outlets including AM Breakfast, Watercolours Fine Dining, Kokomos Poolside Bar And Grill, and our coffeeshop, Bistro on The Bay, as well as, banquet services, our culinary department, and resort activities creating memorable experiences for our guests while maintaining operational excellence. This position offers an exciting opportunity to lead a historically incredibly successful food and beverage department where passion for people and experiences shapes each moment and makes memories that last a life-time for our guests.
Duties
- Lead and manage all food and beverage departments, including outlets, culinary, banquets, and resort activities ensuring seamless coordination across teams.
- Develop and implement operational strategies to maximize service offerings, presentation, promotions and activities, activations, and guest satisfaction.
- Supervise staff recruitment, training and development, coaching and counseling, scheduling, and performance evaluations to continue fostering a highly motivated, successful, high performing team of food and beverage leaders and line level associates.
- Manage inventory control, cost analysis, budgeting, and financial operations to maximize profitability while maintaining high-quality standards.
- Ensure adherence to hospitality management best practices including POS systems operation, shift management, and customer service excellence.
- Monitor daily operations to uphold food safety standards and sanitation procedures across all outlets.
- Oversee maintenance and lifecycle management of all food and beverage equipment and supplies.
- Evaluate and enhance existing procedures while developing new concepts or service enhancements that elevate the guest experience.
- Serve as a senior leader in the hotel both with associates, as well as guest engagement—handling escalated requests, concerns, and recovery situations with professionalism and care.
- Foster strong communication and collaboration across all resort departments to ensure seamless collaboration, camaraderie, service and fun.
- Support high‑volume banquet and group operations, including weddings, social events, and corporate functions.
What are we looking for?
- College degree plus 3-5 years of experience as a Director of Food & Beverage with demonstrated success in high‑volume, managing multiple outlets, and innovative activations.
- Extensive experience in food service management with a strong background in restaurant management and hospitality leadership.
- Proven ability to supervise diverse teams in fast-paced environments with excellent staff supervision skills and servant leader mindset.
- Strong understanding of food safety management practices and sanitation procedures essential for compliance.
- Expertise in managing food production processes, cost control measures, and financial operations within the food industry.
- Proficiency with POS systems and other restaurant technology tools to streamline service operations.
- Exceptional customer service skills with the ability to manage hospitality teams effectively under shift management scenarios.
- Experience in banquet service, catering coordination, barista duties or coffee-related roles is a plus for versatile leadership.
- Leadership qualities that inspire teamwork while maintaining high standards of quality and efficiency in all facets of food & beverage operations.
