JOB SUMMARY:

This position is under the direct supervision of the Food and Beverage Manager (Chef), and is located at The Stables Casino. The Line Cook is responsible for preparing, cooking, and arranging food in accordance with kitchen guidelines. This individual will not only understand and utilize proper food safety protocol but will also exercise caution when utilizing kitchen utensils and equipment. A Line Cook will maintain an efficient food operation by preparing hot and cold food items in accordance with production requirements, recipes and established safety policies and procedures. 

MAJOR JOB FUNCTIONS:

• Assists the Chef and other kitchen staff with overseeing and maintaining all food storage, preparation, and production
• Executing same-ticket order coordination to ensure items finish at the same time
• Performing opening, closing and side duties as required
• Ensures complete guest satisfaction
• Set up fryer workstation with all needed ingredients and cooking equipment
• Prepare food items in fryers
• Keep a sanitized and orderly environment in the kitchen
• Adhere to food safety, food handling, and sanitation procedures
• Ensure all food and other items are stored properly
• Arrange and portion food according to established guidelines
• Safe utilization of utensils including knives
• Wash dishes as needed
• Clean fryers and change oil weekly

• Ability to follow direction regarding food preparation, storage, and safety
• Contributes to a team effort and accomplishes related results as required
• Performs other tasks and duties as directed

Requirements

MINIMUM QUALIFICATIONS:

• Must be 18 years of age
• Must have a High School Diploma or GED
• Must possess a valid driver’s license
• Prefer one (1) year related experience or training 
• Must be able to obtain and maintain a Modoc Nation Gaming License
• May be subject to criminal background investigation
• Must possess in high integrity regarding confidential and sensitive information
• Must possess excellent communication skills, both written and oral
• Must have the ability to work in fast paced environment, multitask and meet deadlines

REGULATORY COMPLIANCE:

• Maintains excellent working relationships with other Company staff and all applicable regulatory commissions and other agencies as may be applicable to ensure compliance.
• Performs all duties in accordance with the gaming operations core values, objectives of the Modoc Nation, system of internal control policies and procedures, as well, as applicable laws and gaming regulations, including but not limited to, the state-tribal compact, IGRA, MICS, the Bank Secrecy Act, Office of Foreign Asset Control, USA Patriot Act and Privacy Act.
