Farmer's market-driven concept is hiring a hands-on leader to run a diverse bread and pastry program!
The priority for this position is to provide support, stability, and systems to the bakery team as retail and internal production continues to grow. Beyond building structure, this role also offers ample creative opportunities, with a focus on seasonally inspired offerings made from the finest ingredients. Bread and viennoiserie are the backbone of the pastry program, with pastries and plated desserts rounding things out. This is for a group that is continuing to evolve with upcoming growth.
Executive Pastry Chef Responsibilities:
- Lead production and execution of bakery team including bread, lamination, pastries, and production for plated desserts
- Collaborate closely with ownership on seasonal shifts, new menu items, and general recipe ideation.
- Overseeing operational and administrative aspects of the pastry kitchen and team.
- Minimizing waste and sourcing superior products.
- Maintaining the highest standards of cleanliness and sanitation.
- Training, coaching and developing staff to achieve standards of excellence.
- Creating a positive work environment through effective communication and care for staff.
Executive Pastry Chef Preferred Requirements:
- A minimum of 2-3 years of experience as a Pastry Chef overseeing a team of at least 5 pastry cooks in a respected kitchen
- Experience operating a sheeter, mixer, proofer and baking ovens
- Attention to detail and the ability to produce bakery items to exacting specifications in a timely manner
- The flexibility to collaborate closely with leadership
- The ability to create recipes and builds
- Excellent communication skills and leadership qualities
- Exceptional standards for cleanliness, health, and safety
- Flexible schedule, including weekends, and on holidays
