- Controlar el cumplimiento de los procedimientos descritos en el manual de inocuidad y manuales de clientes.
- Controlar y registrar las condiciones ambientales para la producción y conservación de alimentos.
- Controlar las temperaturas de los cuartos fríos y neveras, así como del producto en proceso y terminado garantizando el cumplimiento de los estándares de calidad.
- Controlar y registrar en el formato respectivo, los pesos de los productos en proceso y terminado, teniendo en cuenta el instructivo Control de Pesos Producto en Proceso y Terminado, o CCP.
